Sturia Caviar proceeds from farmed sturgeons in the southwest of France. Due to the decreasing quantity of wild caviar produced in the Caspian Sea, most countries are now banning imports from that area. Sturia is a sustainable source and its quality level is comparable to Oscietra caviar. It is as close as you can get from the wild delicacy.
Sturia caviar is produced by Caviar et Prestige, the largest producer of caviar in France, near Bordeaux. Thanks to great improvements in farming techniques, Sturia is now used by several 3* chefs in the world. Most importantly, prices are stable and attractive, while its production is sustainable, an important factor since stocks of wild sturgeons are almost finished.
